I was never a fan of coconut as a kid. Well, at least that dry, shredded stuff mom put on cakes. I always said it was like eating grass. Why and how on earth could anyone enjoy that was beyond me.
But a few years back, I discovered coconut in a whole new way and I have loved it ever since. So, I thought I’d write a bit about it and share with you how to use it in its diverse and varied forms as a delicious and nutritious elements of health and wellness; one that might surprise you!
Whole coconut products, those containing the coconut oil are hands down natures very best source of lauric acid; an essential fatty acid that enhances the immune system. And we all know that the immune system is critical to wellness. These coconut products thereby, protect the body against viruses, yeasts, parasites and a multitude of other pathogens in the digestive tract which is the heart of immunity.
But what are the best products and how do you use them in your nutritional strategy?
Extra Virgin Coconut Oil:
Never buy hydrogenated coconut oil. In fact, consider that a dirty word period. Buy organic, cold pressed, extra virgin only. And don’t be alarmed when you discover a jar filled with a white, solid mass. Good quality coconut oil is solidifies when in a cool environment. This is perfect for baked goods and to sauté veggies. It adds a rich, nutty flavor that is simply good!
Coconut Cream:
This is made from finely ground coconut meat with all of its oil. It is delicious added to soups, stews, curries, sauces as it imparts a rich, creamy texture and taste.
Coconut Milk:
Coconut milk can now be found in most any store. NEVER, however, buy “lite”. Use it like coconut cream in soups, stews, sauces, curries, broths. Perfect in smoothies but also, and surprisingly so, in beans and grains!
Desiccated Coconut Meat:
Always buy unsweetened for use in desserts, as salad, grain or vegetable toppings. Oh, by the way, finely ground coconut is more readily digested and gives up its lauric acid content for assimilation more easily than shredded coconut.

Corinne Rodrigues felt good to read this,especially because I belong to the community of Chitrapur Saraswat Brahmins & we love coconut cuisine.Infact grate and ground coconut figures in most of our cuisine be it sweet delicacies for dessert,porridges,stews,soups,chutneys & other accompaniments,rice preparations,snacks,curries or dry sauted vegetable.I would also like to add that we can make very tasty chutneys from quite a few vegetable peels,seeds and what have you.

I have to say that I agree with everything written in this post. Esp. in my country, Philippines, we are taught of the many different uses and benefits of coconuts since we were young. We grew up with coconuts, esp in the provinces. Stay away from a coconut tree when windy though!

Coconut does have a lot in it that we really don’t know. I liked all that you shared and yes, we do use all of them except the oil part of it- because there are other healthier options available also. I think adding it to your gravies or curries – enhances it’s taste and texture. And my kids just love to make desserts and sweets from desiccated coconut too.

That shredded stuff is not so nice for sure. Have you tried any of these other coconut products though?

How funny to find a coconut post today. I just bought some coconut milk yogurt yesterday. Sounded interesting. Will try it today. When I lived in Abidjan, there was a hotel nearby that had bowls of fresh coconut pieces on the tables in the lobby. So instead of a bowl of nuts, you could munch on fresh coconut. I loved it! So different from the dried and sweetened coconut I was familiar with. Every now and then we buy a coconut and crack it open and dig out the meat. Lots of work, but so delicious. Glad to learn of these other coconut products.
